All of a sudden, they had to figure out how to work from home, guide their kids through e-learning, prepare more meals and manage the other regular duties of parenting. Little did these parents know that all those stressors would return in the fall.

Three-fourths of America’s school children were engaged in some form of e-learning in late September, leaving the burden of food preparation on parents for almost every meal. According to a new Castle Wood Reserve consumer survey, seven in ten K-12 students get breakfast at home, while 66% get lunch from home and 74% get snacks at home.

Because of the demand to cook and eat at home more frequently, about one-third of parents said meal preparation is more difficult this school year than it was last year. Parents also cited food availability and the challenge of planning meals as top reasons that meal preparation is more difficult.

The coming months are not going to be any easier on parents. With COVID-19 case counts rising across the country, even more school districts are transitioning to full-time virtual learning. Parents are seeking convenient, delicious solutions that save them time in the kitchen.

In the survey, for most dayparts, parents cited protein as the most important nutrient that they seek for their kids.

According to the USDA Dietary Reference, the recommended daily allowance of protein is 0.36 grams of protein per pound of body weight as part of a balanced diet. So, someone who weighs 120 pounds needs about 43 grams of protein each day.

Why is it important to achieve an adequate intake of daily protein? Protein helps repair cells, boosts energy and keeps us satiated longer, so kids are not constantly asking for another snack. Protein also serves a vital function as building blocks for bones, muscles, cartilage, skin and blood.

With health and convenience in mind, parents are making the most drastic changes to their lunches and snacks. Three-fourths of parents in the survey reported that lunches in their household had been impacted by returning to school, and 68% said that snacking had been affected.

Planning these meals ahead of time can be a lifesaver for time-crunched parents. Consumers should map out daily meal choices based on activities and school schedules for the week. When students are at home for e-learning, parents can assemble bento boxes or pre-packaged meals, leave them in the refrigerator and allow their kids to grab them once they are hungry.

Smart shoppers will also plan meals before getting groceries and stick to the outside perimeter of the store to purchase fresh ingredients, including vegetables, fruit and lean meats. Creating a shopping game plan leads to healthier meals, while saving time and money. Digital tools can help kids build safe money habits

When it comes to teaching kids about money, caregivers are asking for help. In fact, 32% of parents are uncomfortable speaking about finances with their own children and 46% are looking for additional resources to help encourage good financial habits, according to a Chase survey of parents across the U.S., with children aged 8–14.

Traditionally, kids learn about money from shopping with adults and having related conversations. While discussions are an important part of learning about finances, online shopping has changed how kids experience spending.

Fortunately, new tools are helping meet the changing needs of parents and their children. In addition to adopting useful tools, it’s important to have ongoing conversations about finances. Morgan-Gans suggests starting with some rules for a family ‘contract’ when it comes to having access to an account:

  1. I will spend responsibly and discuss what are acceptable purchases with my parent
  2. I will make a savings goal, discuss it with my parent, and work toward it
  3. I will not use my debit card on websites or at stores my parent does not approve of
  4. I will always keep my card in a safe place and discuss the best place to keep it with my parent
  5. I will not share my PIN number or account number with anyone
  6. I will not post pictures of my card or app on social media or share them with my friends
  7. I will never go to an ATM alone and will only use ATMs inside a bank

“These tools can help guide parents, so they have the confidence to teach kids about bank accounts and spending — it’s like an account with training wheels,” says Morgan-Gans.

Ingredients:

1 and 1/2 cups half-and-half
16 ounces cream cheese, cubed
2 cups extra-sharp aged cheddar from The Big Cheese, coarsely grated
1 pound radiatori pasta (or any fun pasta shape!)

Directions:

Bring large pot of water to a boil. Once water is boiling, add plenty of salt and 1 pound radiatori pasta. Cook until pasta is al dente (5-10 minutes depending on type of pasta).
While pasta is boiling, add 1/2 cup half and half to a separate large pot or saucepan and reduce about 15 minutes over low heat.
Once cream is reduced, whisk in 16 ounces cream cheese cubes until smooth, then add 2 cups of The Big Cheese. Continue whisking until smooth.
When pasta is cooked, strain and transfer to pot containing creamy cheese mixture. Mix until pasta is evenly coated and serve.

Board-certified dermatologist Dr. Elyse Love shares her expertise on how to take matters into your own hands and what ingredients to look for to help bring your skin the relief it needs this winter — starting with a healthy skin barrier.

Step 1: Switching up your routine for the season

Your skincare regimen should change just as the seasons do to help combat specific skin concerns that are heightened by changing behaviors and other environmental factors.

“When it comes to winter skincare, you should focus on supplementing the skin’s natural moisture barrier and reinforcing its protective layer,” says Dr. Love. “I recommend switching to products that are more moisturizing and cream-based in the winter, as a cream can help prevent skin from further drying out, so upgrading your moisturizer, swapping out a foaming cleanser for a cream-based wash and decreasing the frequency of potentially irritating ingredients, like retinols and acids, can help skin retain moisture in a season when it is needed most.”

Winter can expose skin to elements that compromise the skin barrier, causing skin to lose natural oils and hydration in the winter, so regularly using a thicker cream can help restore the skin barrier to seal in moisture and replenish its composition.

Step 2: Seek nourishing ingredients for a healthy skin barrier

A healthy skin barrier, supported by the right ingredients, is the first line of defense against harsh winter elements. While ceramides are found naturally in the skin and make up 50% of the skin’s barrier, they can be depleted by daily irritants like cold weather, hot showers and high thermostats, so it’s important to use products that add ceramides back into the skin.”

Hyaluronic acid is another essential ingredient for hydration. “In our skin, hyaluronic acid binds to water molecules in the environment, so using a moisturizer with this ingredient actually increases the efficacy by helping the skin to attract and retain more of its moisture,” Dr. Love says.

Godbout said that while practices people follow to help guard against COVID-19, such as handwashing, social distancing and wearing masks, will probably help decrease the spread of influenza, the flu shot is still the single most effective way to reduce the spread of the flu.

2. Flu shots are safe

“The flu shot is very safe and effective at helping prevent severe disease and hospitalization,” Godbout said. “I know people might have reservations about coming into the doctor’s office, but I can assure everyone that our providers are really vigilant about taking appropriate precautions to make sure everyone is safe.”

The doctor also pointed out that patients will not contract influenza from the vaccine. “The virus is inactivated,” she said, “so it can’t actually cause the flu infection after you get the shot.”

Flu shots are recommended for anyone six months old and older.

3. Flu shots are updated every year

“The U.S. flu vaccine is reviewed every single year and updated to match circulating flu viruses,” said Godbout. “The flu vaccine can typically protect against three or four different viruses. Since the virus changes from year to year, immunization or natural infection from the previous year is not protective.”

She also said that our antibody response — what helps us fight the virus — can decrease over time, so a yearly dose will help boost the antibody response before the start of the influenza season.

4. Influenza and COVID-19 share some overlapping symptoms

It’s important to know that some symptoms of COVID-19 and influenza are similar. If you have symptoms you are concerned about, it’s best to call your health care provider right away. You may need to be tested for both the flu and COVID-19 to be certain what is causing you to be sick, so your doctor can recommend the best course of treatment.

While having the flu shot doesn’t mean you can’t get the flu, as discussed above, a vaccination will at least lessen the severity of your symptoms — giving you and your loved ones peace of mind.

Reducing the spread of flu cases overall, by getting vaccinated, will help cut down on the number of seriously ill patients that clinics and hospitals need to diagnose and treat, which will help everyone get through the winter season more easily.

5. A flu shot protects you throughout the season

Now is a good time to get vaccinated. It takes a couple of weeks for antibodies to develop in your body, but the vaccination will continue to protect you throughout the worst months of the flu season.

If you’re following the Mediterranean, Keto or Paleo diets, you’re probably aware that lean meats like beef play a vital role as part of an overall healthy eating plan, balanced with plant-based foods like vegetables and legumes.

Elsewhere in the world, however, access to high-quality sources of protein is a serious challenge. Malnutrition is a significant global public health issue, and recent data shows that countries with the lowest meat access have some of the highest rates of malnutrition. Beef provides protein

According to the U.S. Department of Agriculture, one three-ounce serving of beef delivers approximately 25 grams of high-quality protein, which is essential for building and maintaining strength for your mind and body.

How do relatively high-protein grains compare with beef? The USDA’s Food Data Central database reports that to get the 25 grams of protein found in one 3 ounce serving of cooked beef, you would need to eat three cups of quinoa – which is more than 3 times the typical serving size for cooked quinoa of 140 grams, about ¾ cup.

Beef and iron

Another global nutrition challenge is iron deficiency, which is a concern among adolescent girls and women worldwide. A particular kind of iron called heme iron, which is critical to addressing this deficiency, is found only in animal foods like beef, not plant foods.

Here in the U.S., lean beef contributes 8% of the iron in a typical diet. At a time when many are deficient in this essential nutrient, eliminating beef could worsen the problem of iron deficiency.

Red meat is not contributing to obesity

Americans are consuming 600 more calories a day, on average, than they did 40 years ago. These extra calories are coming from refined grains, added fats and oils, not red meat. Americans, on average, eat fewer than two ounces of beef daily, which is in line with the 2015 Dietary Guidelines.

Our diet is already plant-based — and has become increasingly more so over the last four decades, when obesity has also increased.

Beef promotes lifelong health

The nutrients in beef promote health beginning in childhood. The American Academy of Pediatrics, the Women Infants and Children’s Program and now for the first time ever, the 2020 Dietary Guidelines Advisory Committee recommend introducing solid nutrient rich foods, like beef, to infants and toddlers, in order to pack in every bite with protein, iron, zinc and choline.
